Seashore dining in the west

Book now for a new restaurant serving up the bounty of the sea and the land in a boathouse in Connemara


Katie Sanderson and Jasper O'Connor, who met and worked together in the Fumbally cafe in Dublin, have moved west to run a summer food project called Dillisk. They will offer five-course tasting menus in a boat shed on the water's edge on the Aughrusbeg peninsula near Claddaghduff and Cleggan. It's marked as "Dillisk" on the map (above) drawn by Emily Archer.

Dinner will be served on Thursdays, Fridays and Saturdays. The €55 ticket (€50 on Thursdays) includes a welcome drink and you can bring your own wine or beer. “Local fishermen text us on their way in with news of the catch; the mussels come from Killary harbour, lamb from Mayo, and veg from our neighbours’ Jagur organic farm. Most exciting for us is the bounty of seaweed right in front of the shed on the shore,” O’Connor says.

Sanderson is known for her Living Dinners raw food pop-ups and The Hare cafe, her collaboration with the artist Fiona Hallinan which had a temporary residency at the Temple Bar Gallery last October and will be revived for the Summer Rising programme at IMMA next month.

O’Connor has worked at Town Bar & Grill, The Cake Cafe and Ard Bia, and recently spent three months working in restaurants in the US.
