The Roe & Co distillery is in the old Guinness power station in the Liberties area of Dublin. If you haven’t been, it is well worth a visit.

Last year, they released the first in their Curator series, a whiskey with a high malt content that had been finished in Port casks. The second in the series is an interesting collaboration with Killahora Orchards.

Killahora, based in Glounthane in Co Cork is one of the most innovative drinks producers in the country. From their apple and pear orchards, they produce a series of fascinating liquids, including the award-winning iced apple wine, which features on the wine list Aimsir and other Michelin-starred restaurants.

For this release, the two companies swapped barrels. Roe & Co received some Killahora casks which they used to age their original blend for around a year. Curator series 0.2 is an intriguing whiskey with notes of caramel combined with subtle baked apple with spice – a liquid Tarte Tatin?
