What’s on offer?

Ross Cronin – a restaurateur and software entrepreneur – launched Uno Pizza in Rathmines in June 2019. His friendship with master pizzaiolo Sergio Russo – a “tre spicchi” Gambero Rosso pizza chef from Sicily – led to an immersion in Neapolitan pizza-making.

Their dough blends medium and strong flours, with 69 per cent hydration and a 28-hour fermentation for a light, airy crust. They use an electric Izzo Neapolitan pizza oven, running at 420 degrees to the front and 500 degrees at the back. The menu has stayed largely the same since opening – Margherita, diavola, hot honey, and prosciutto and funghi are staples. Specials that prove popular tend to stay.

Tomatoes are from San Marzano. Fior di latte, mozzarella di bufala and burrata are all sourced from Campania.

Recently, they teamed up with Blackbird – the pub across the road – allowing patrons to order pizzas and have them delivered to their table.

What did we order?

One diavola; a Siciliana; a quattro formaggi; and a garlic and herb dip.

How was the service?

We ordered at the restaurant for takeaway but decided to eat in. Service was efficient and personable.

Was the food nice?

The pizzas are not pre-sliced but aren’t difficult to manage.

The quattro formaggi – a white pizza – is loaded with fior di latte, Gorgonzola, Parmigiano Reggiano, and scamorza. The fior di latte is a bit firm – creamier would be better – but the blue cheese and smoky scamorza give it plenty of flavour.

The base is thin, Neapolitan-style, and slightly weighed down by the toppings. The Siciliana has capers, anchovies, briny black olives, mozzarella, oregano, and San Marzano tomatoes – a strong combination, but a bit wet, making the base taste doughy and undercooked.

The diavola has plenty of pepperoni salami – its toasty red discs working well with the tomatoes, chilli flakes and mozzarella.

What about the packaging?

The pizza boxes are compostable. All other packaging is either recyclable or compostable.

What did it cost?

It cost €55 for dinner for three people: a diavola, €16.50; a Siciliana, €18; a quattro formaggi, €18,50; and a garlic and herb dip, €2.

Where does it deliver?

Open Fri-Sat, 12.30pm – midnight; Sun-Thur, 12.30pm – 10.30pm. Eat-in, takeaway and delivery via Deliveroo, Uber Eats and Just Eat. The delivery radius (approx 5km) depends on the delivery partner.

Would I order it again?

Perhaps. Comparisons with newly opened Reggie’s Pizzeria are to be expected, and they’re not quite at that level. However, I would imagine that having pizzas delivered to you and your mates while you socialise in Blackbird is very pleasant indeed.
