Ingredients
- (serves 4)
- 200g black rice
- 2 cloves garlic, crushed
- 2 tbsp tahini
- 2 tbsp tamari
- juice of 1 lemon
- 60g toasted shelled pistachios
- big bunch parsley, chopped
Cook the rice in boiling water for 35-40 minutes until tender . Meanwhile, in a bowl, whisk together the tahini, tamari, lemon juice and garlic to make the dressing, which you can let donw with a litle hot water. When the rice is cooked, drain it and leave to cool before tossing thoroughly in the dressing. Mix in the chopped parsley and serve.
