Spring Scrambled Eggs

Ingredients

  • (serves 4)
  • 40g butter
  • small bunch spring onions, finely chopped
  • 8 eggs, beaten
  • about ten cherry tomatoes, quartered
  • 2 ripe avocadoes
  • juice of 1 lime
  • 1 clove garlic, crushed
  • good splash tabasco

First, mash the avocados in a bowl and add the garlic, lime juice and Tabasco sauce before setting aside.

Next, melt the butter in a large frying pan over a medium heat. Add the spring onions and soften for a minute or two before adding the eggs and tomatoes together. Cook till soft, remembering that they will continue to cook once off the heat, so don’t overdo it. Serve with the crackers.
