Ingredients

  • <br /><strong>Tartare</strong>2 tsp wasabi paste
  • Juice of 2 limes
  • 2 tsp sesame oil
  • 500g super-fresh tuna and salmon fillet, finely diced<strong>Sauce</strong>Large bunch coriander
  • Large bunch mint
  • 2 spring onions
  • 1 green chilli
  • Big knob of ginger, grated
  • 2tbsp sesame oil
  • Juice 2 limes
  • Squeeze of honey<strong>To Garnish</strong>2 tsp sesame seeds
  • Edible flowers

Marinate the fish in the wasabi, lime juice, and sesame oil; the juice will “cook” the flesh and turn it opaque. Next, blitz the ingredients for the sauce in a blender and season really well. Just before serving, mix the two together. Garnish with sesame seeds and edible flowers.
