Ingredients

  • 6 ripe plums
  • 1 stick of cinnamon
  • 1 star anise
  • A sprig of thyme
  • 1 fresh bayleaf
  • 200mls cider
  • 2tbsp brown sugar
  • 300g of Crozier Blue (or your favourite blue cheese)

1 Set the oven to 185 degrees Celsius, or equivalent.

2 Stone the plums and put them cut side up into a roasting tray.

3 Add the remaining ingredients, making sure there is an even coating of sugar over the plums.

4 Bake for 25-30 minutes, basting the plums once or twice during cooking.  The length of time in the oven entirely depends on the ripeness of the plums – they should be soft and giving to the touch.

5 When they are cooked, decant them into a bowl and pour the juice over the top.

6 Serve with the cheese and parmesan biscuits.
