Ingredients
- 1 loaf white, sliced bread
- Soft butter
- 500g cream cheese
- Juice of ½ lemon
- Black pepper
- 1 cucumber, peeled into strips
- 6 radishes, thinly sliced
- 250g smoked salmon
- Chives and edible flowers to decorate
- Line your loaf tin with baking paper or cling film, which makes it easier to lift out. Trim the crusts from your bread. Prepare your vegetables and set aside.
- Mix the cream cheese with the lemon juice and a little black pepper. Spread each slice of bread with a thin layer of butter (this is to prevent the filling making the bread soggy) and a little cream cheese. Layer the slices of bread with the cream cheese and your filling of choice; in this case long strips of cucumber and smoked salmon with a few thin radish slices.
- Finish with the last slice of bread, then cover and place in the fridge for a few hours to set. Carefully turn the loaf out and cover in more cream cheese – like icing a cake. Decorate with chives and edible flowers. Cut into thick slices and serve.
