Farmers turned out in increasing numbers at meat plants in the south-east in response to Monday's developments.
At Slaney Meats in Bunclody, Co Wexford, an average of 75 farmers maintained a blockade throughout the day, about three times the number who were present on Monday before the High Court increased the fine on the IFA to £500,000 per day.
"It's a sad day for Ireland when bully boys are allowed to win the day," said one farmer, who did not wish to be named.
The prospect of court action against individual farmers would not deter the picketers, he said. "If the judge wants people arrested here he'll have to send a train to Wexford. How else will he get us out of here? If the gardai try to arrest anyone there'll be a riot," he said.
About 350 farmers turned up at a Wexford county executive meeting of the IFA on Monday night at which the organisation's chairman, Mr Peter Earle, resigned his post.
In Waterford, gardai were called to the Dawn Meats factory after protesting farmers apparently tried to stop a lorry leaving from the rear of the plant. The lorry struck a gate which picketers were attempting to close. One farmer was injured but declined to go to hospital.
