If you do one thing this week....make pancakes with a healthier twist
It’s pancake Tuesday – a much anticipated event in many households – and today plenty of eggs, milk and flour will go into making tasty breakfasts and desserts.
So how can you give your pancake batter a slightly healthier twist?
Try opting for low-fat milk, and if you are putting in sugar, go easy on it: adding a bit of ground cinnamon or mixed spice to the dry mix before adding the wet ingredients can lend flavour without maxing out the calories.
And how about throwing in some anti-oxidant-rich blueberries into the batter if they are to hand too?
Another tip is to choose the toppings carefully. Try yogurt, a drizzle of honey or a squeeze of fresh lemon and put some chopped fresh fruit on the side. Enjoy.
