Mighty maple pork

Ingredients

  • 1 pork steak
  • Extra virgin olive oil
  • Salt and pepper
  • 5 shallots, peeled and sliced in half lengthways
  • 1 red chilli, thinly sliced
  • 5 garlic cloves, crushed
  • 2 tbsp maple syrup
  • Butter
  • To serve: parsley
  1. If you have not already seasoned the pork, do so with some salt. Then coat the pork with a little oil and preheat a pan over high heat. Add the pork and black pepper and cook, turning and flipping it often, until it is well browned and firm to the touch. This should take about 15 minutes and if you have a temperature probe it should be at least 65 degrees internally. Transfer the pork to a cutting board to rest.
  2. Add the shallots to the pan and let the cut sides colour a bit before adding the chilli and garlic. Let them cook for about 10 minutes before adding the maple syrup and butter.
  3. Slice the pork and place the medium-cooked meat back in the pan. Spoon and toss the sauce all over the pork before serving. Season with salt and pepper and garnish with some parsley and/or wilted greens. (The greens can be wilted down in the pan after you remove the finished pork.)
