Hillbilly’s Family Restaurants is set to create 80 part-time and fulltime jobs in the first half of 2014 as it opens three new stores in Galway, Cork and Dublin.

Established in 1997 in Cork by Michael Grace, the fast-food restaurant currently operates eight stores across Ireland, and will this week open an 80+ seating restaurant on Eyre Square in Galway, which will employ 40 people.

Eamon Keogh, manager of the Galway restaurant, said the response to the new outlet has been "enthusiastic".

The restaurant chain operates a franchising model, based on an initial 10-year agreement, with the possibility of extending for a further 10 years.
