Chef Adam Nevin to leave Michelin-starred Morrison Room at Carton House

The executive chef’s last day of service at The Morrison Room is Sunday, May 17th

Chef Adam Nevin has announced he will be leaving the Michelin-starred Morrison Room a little more than a year after the restaurant was awarded the honour.

Speaking on social media, the executive chef did not state his reason for departing, but said: “After 2½ incredible years, I’ve decided that Sunday, 17th May, will be my last day at The Morrison Room.”

The restaurant, at the five-star Carton House in Maynooth, first opened in 2021 before reopening in October 2023, with Nevin at the helm.

The Morrison Room was awarded its Michelin star in February 2025 at the Michelin Guide annual ceremony for Britain and Ireland which took place in Glasgow, and then retained its star at the Dublin Michelin ceremony in February 2026.

In a statement on Instagram, the Maynooth native said: “I’m incredibly proud of what we’ve been able to achieve here at home and I’ve had the greatest time working with some of my best friends.”

He added: “A huge thanks to my staff - past and present, our amazing guests, all of the great suppliers we work with every day and to everyone who has supported us along the way.”

He did not reveal what his next venture will be, but concluded the post by saying he was “going out with a bang” and encouraged diners to “come and see us before I finish up”.

A statement issued on behalf of the management of the hotel said that Nevin’s departure was the end of an “exceptional chapter” at Carton House.

“Since joining in September 2023, Adam has brought outstanding talent, dedication, and vision – playing a key role in leading the team to achieve and retain The Morrison Room’s Michelin star.

“On behalf of the entire team at Carton House, we extend our sincere gratitude to Adam and wish him every success in the next chapter of his journey.”

The chef’s previous credentials include a string of fine-dining restaurants in high-end hotels: The Saddle Room at Dublin’s Shelbourne; The Grill at The Dorchester in London; and The Westbury in Mayfair, London.

Carton House boasts a demesne of more than 1,000 acres, 169 bedrooms and two championship golf courses where the 2024 and 2025 Women’s Irish Open was hosted. The venue also regularly hosts training camps for the Ireland men’s rugby team.

The estate was sold in a Nama-backed sale for €57 million in 2017 to Irish-American businessman John Mullen.

It reopened and relaunched in June 2021 as a Fairmont managed hotel and in 2025 recorded pre-tax losses of €3.47 million.
